After all those heavy winter dishes, a little crisp-baked fish with vegetables makes the body feel good.
Ingredients:
- 1 piece filleted pike-perch per person
- shallots
- asparagus
- pea pods
- bell peppers
- whole chilies
- fresh parsley
- olive oil
- salt, pepper
Season each piece of fish with salt and pepper, then pan-sear the slices in the oil, turning several times. Remove the fish, and add the vegetables. Brown until crisp, seasoning with salt, pepper, and fresh parsley.
Tip: Excellent when accompanied by new potatoes with parsley!
